L&#8217;acrylamide se forme dans certains aliments soumis \u00e0 des temp\u00e9ratures de cuisson \u00e9lev\u00e9es (&gt; 120\u00b0C) suite \u00e0 la r\u00e9action de Maillard (r\u00e9action entre un sucre r\u00e9duit et un acide-amin\u00e9 qui donne un teint dor\u00e9 \u00e0 certains aliments).<\/p>\n<p>Bien que des associations \u00e9pid\u00e9miologiques entre l&#8217;acrylamide et le cancer chez l&#8217;humain n&#8217;ont pas \u00e9t\u00e9 d\u00e9montr\u00e9es, les marges d&#8217;exposition mesur\u00e9es montrent cependant des pr\u00e9occupations concernant des effets n\u00e9oplasiques, bas\u00e9es sur des \u00e9tudes animales.<\/p>\n<p>il a donc \u00e9t\u00e9 conclu, d&#8217;apr\u00e8s les \u00e9tudes chez l&#8217;animal, que l&#8217;exposition \u00e0 l&#8217;acrylamide augmente potentiellement le risque de d\u00e9veloppement de cancer.<\/p>\n<p>Source: <a href=\"http:\/\/www.efsa.europa.eu\/en\/efsajournal\/pub\/4104.htm\" target=\"_blank\">cliquez ici<\/a><\/p>\n<p>&nbsp;<\/p>\n<\/div><\/div><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>L&#8217;EFSA a donn\u00e9 son avis scientifique concernant l&#8217;acrylamide dans les aliments.
