This project piloted by INRAE and the &#8216;ANIA aims to mobilize the natural techniques of fermentation in order to accelerate the agricultural and food revolution in the service of a healthy, durable and traceable food.<\/em><\/p>\n<p class=\"J0lOec\"><span class=\"VIiyi\" lang=\"en\"><span class=\"JLqJ4b\"><span class=\"Q4iAWc\">A certain number of <strong>benefits on the intestinal microbiota and health<\/strong> are attributed to ferments and natural fermentation: <\/span><\/span><\/span><\/p>\n<ul>\n<li class=\"J0lOec\"><span class=\"VIiyi\" lang=\"en\"><span class=\"JLqJ4b\"><span class=\"Q4iAWc\">the acidification linked to fermentation makes it possible to <strong>inhibit the growth of undesirable microorganisms<\/strong>, ensuring better preservation; <\/span><\/span><\/span><\/li>\n<li class=\"J0lOec\"><span class=\"VIiyi\" lang=\"en\"><span class=\"JLqJ4b\"><span class=\"Q4iAWc\">fermentation also makes it possible to <strong>provide vitamins and antioxidants<\/strong> and <strong>to develop new aromas<\/strong>. <\/span><\/span><\/span><\/li>\n<\/ul>\n<p><span class=\"VIiyi\" lang=\"en\"><span class=\"JLqJ4b\"><span class=\"Q4iAWc\">The virtues of ferments could make it possible to reinforce the naturalness of foods by limiting the use of additives, to improve the nutritional profile of foods, and to maintain or restore a favorable microbiota to health by developing new probiotics. <\/span><\/span><\/span><\/p>\n<p><span class=\"VIiyi\" lang=\"en\"><span class=\"JLqJ4b\"><span class=\"Q4iAWc\">In this context, the &#8220;Ferments of the Future&#8221; Grand Challenge is a research and innovation platform unique in Europe that aims<span class=\"JLqJ4b ChMk0b\"> to bring together French food companies and research and development of the domain of natural ferments.<\/span><br \/>\n<\/span><\/span><\/span><\/p>\n<p><span class=\"VIiyi\" lang=\"en\"><span class=\"JLqJ4b\"><span class=\"Q4iAWc\">The next stages of &#8220;Ferments of the Futur&#8221; are planned for 2023 with the launch of a platform in Saclay and the opening of a first call for research projects in early 2023. <\/span><\/span><\/span><\/p>\n<p><span class=\"VIiyi\" lang=\"en\"><span class=\"JLqJ4b\"><span class=\"Q4iAWc\">To know more, you can consult the <a href=\"https:\/\/www.inrae.fr\/sites\/default\/files\/pdf\/CP%20-%20Lancement%20du%20Grand%20D%C3%A9fi%20Ferments%20du%20futur.pdf\" target=\"_blank\" rel=\"noopener noreferrer\">INRAE \u200b\u200bpress release<\/a> (in french).<\/span><\/span><\/span><\/p>\n<p><em><strong>Orchidali can do and analyse <a href=\"https:\/\/science-nutrition.com\/en\/scientific-literature-review\/\" target=\"_blank\" rel=\"noopener noreferrer\">updated literature review<\/a> or <a href=\"https:\/\/science-nutrition.com\/en\/bibliometry-on-articles-andor-patents\/\" target=\"_blank\" rel=\"noopener noreferrer\">bibliometric analysis<\/a> related to gut microbiota and health.<\/strong><\/em>\n<\/div><\/div><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>Financed by the French State, with a total of 48.3 million euros for the cadre de France 2030, the Grand D\u00e9fi \u00abFerments du Futur\u00bb was announced by webinaire Monday September 12, 2022.
