The 23rd International Nutrition Congress of the International Union of Nutrition Sciences (IUNS) was held in Paris from August 24 to 29, 2025. It was organized with the support of the French Nutrition Society (SFN) and the French Nutrition Federation, with the main theme of Sustainable Nutrition for Global Health. The fundamental, clinical, epidemiological, and social aspects of nutrition were addressed during symposia, lectures, oral presentations, and e-posters. Associations from different continents were represented and organized specific symposia.
This event, which takes place every four years, brought together more than 3,800 participants from 117 countries. The program was dense and varied, addressing topics such as malnutrition, plant-based diets, the gut microbiota, ultra-processed foods, nutritional deficiencies, aging and diet, One Health, and more. Ultra-processed foods were discussed in various sessions from both a public health perspective and a food technologist’s perspective. Some participants commented on the weakness of the currently available evidence. Hopefully, new knowledge from interventional clinical studies and the influence of industrial processes on nutritional quality and health benefits will shed light on this topic.
The conference concluded with a message from IUNS President Lynnette Neufeld calling for an end to the use of food as a weapon of war.
The next ICN/IUNS conference will take place in Vancouver in December 2029.
