On September 13, 2023, a day dedicated to Ferments of the Future will be held, dedicated to researchers in artificial intelligence and data science! The objective of the Ferments of the Future Grand Challenge (2023-2030) is to innovate in the field of ferments and fermented foods to respond to the challenges of health, climate change and adaptation to consumer expectations.
This first day is intended for researchers in Artificial Intelligence (AI) and Data Sciences in order to familiarize themselves with the ambitions of the program, the concepts and mechanisms of food fermentation, to understand, identify and deepen the obstacles by exchanging with the academic and industrial communities mobilized (microbiology, processes, etc.).
The Ferments du Futur program is part of the national acceleration strategy “sustainable and health-promoting food” of France 2030, coordinated by INRAE (National Research Institute for Agriculture, Food and Agriculture). Environment) and ANIA (National Association of Food Industries).
