Could we change food environments to promote healthy and sustainable eating behaviours? This question was asked to the speakers during the International symposium organised by the Paul Bocuse Institute in Lyon, on 2nd 2017. During this day, nutritionists but also economists shared experiences and considerations regarding nudges to impact consumers’ food choices.
